Ingredients

  • 1 cup softened butter
  • 2 cups sugar
  • 15 oz ricotta cheese
  • 1 tsp salt
  • 1 Tbp whole milk
  • 2 tsp vanilla extract
  • 2 large brown eggs
  • 4 cups all-purpose flour
  • 2 Tbp baking powder
  • 2 Tbp lemon juice
  • 2 Tbp grated lemon rind
  • 1 1/2 cups confectioners sugar
  • colored sprinkles

Directions:

Preheat oven to 350 degrees F and lightly grease several cookie sheets.

In a large bowl cream the butter and sugar until light and fluffy. Add the ricotta, vanilla and eggs and beat until combined. In a seperate bowl mix the flour, baking powder and salt. Slowly add this to the ricotta mixture until soft dough forms.

Drop about 2 tablspoons of dough onto a cookie sheet about 2 inches apart. Bake for 15 minutes or until the cookies begin to turn golden brown. Place on a wire cooling rack.

In a small bowl mix the confectioners sugar, milk, lemon juice and rind until smooth. With a small pastry spatula spread the icing on cookies and top with sprinkles. Allow to dry and harden for several hours.
