- 1 3- to 3 1/2-pound boneless pork shoulder roast
- 1 18-ounce jar apricot preserves
- 1/4 cup chicken broth
- 2 tablespoons Dijon-style mustard
- 1 large onion, chopped

Step 1
Trim fat from roast. If necessary, cut roast to fit into a 3 1/2- to 6-quart slow cooker. Place meat in cooker. Combine preserves, broth, mustard, and onion; pour over meat.
Cover and cook on low-heat setting for 10 to 12 hours or on high-heat setting for 5 to 6 hours. Transfer meat to a serving platter. Skim fat from the sauce. Spoon some of the sauce over the meat.
