Ingredients
- 4 cups chopped frozen pineapple
- 1 (13.5 ounce) can unsweetened light coconut milk
- 1/2 teaspoon lemon zest
- 2 tablespoons fresh lemon juice
- 1 teaspoon grated lemongrass
- Garnish: chopped macadamia nuts, toasted coconut

Preparation
Step 1
In the container of a blender, combine frozen pineapple, coconut milk, lemon zest, lemon juice, and lemongrass; process until smooth.
Garnish with macadmaia nuts and coconut, if desired. Servie immediatley.
Note: You can substitute 1/2 teaspoon lemon zest for the lemongrass.
