  • 1/4 cup egg substitute
  • 1/4 cup non-fat milk
  • 1/4 cup whole wheat flour
  • 2 tablespoons whole wheat bread crumbs
  • Water/oil mixture

Preparation

Step 1

Place pork chops between wax or parchment paper and pound until they are very thin, about 1/8-inch to 1/4-inch. (You can use a rolling pin, mallet or the bottom of a skillet for this task.) Season with pepper on both sides. In a small bowl, blend egg substitute and milk; set aside. On a plate, combine flour and bread crumbs; set aside. Heat the water/oil mixture in large skillet over medium-high heat. Dip each chop in egg mixture, dredge in flour mixture and then brown both sides. Reduce heat and finish cooking till pork is no longer pink in the center, about 2 to 3 minutes.
