Ingredients

  • 1 box lasagna
  • 1 pound chicken breast cut into pieces
  • 2 T oil
  • 1 medium green pepper chopped
  • 1/4 C chopped onion
  • 2 tsp chili powder
  • 2 C (16oz) ricotta cheese
  • 1 C (8oz) montery jack cheese
  • 1 egg
  • 2 C salsa

Preparation

Step 1

Cook lasagna
Brown chicken in oil. Add pepper and onion and cook til tender. Remove from heat and add all ingred except salsa. Spoon onto lasagna noodle and roll like jelly roll. Top with salsa. Cover and bake at 350 for 25 minutes. Uncover, sprinkle with cheddar cheese and bake 5 minutes more.
Serve with sour cream,olives and chopped tomatoes
