Ingredients
- 7-9 LB brisket
- 2 litres of diet coke
- 1 pkg of dry onion soup
- 1/4-1/2 cup of ketchup
- 2 onions sliced
- 2 carrots sliced
- 2 parsnips sliced
- 2-3 garlic cloves

Step 1
Marinate brisket overnight. Place all vegetables at bottom of roasting pan. Lay brisket fat side up on top of vegetables. Pour coke on top of roast. Slather ketchup over brisket and then sprinkle onion soup on top.
Next day pre-heat oven to 350F. Cover brisket. Allow 40-45 minutes cooking time per pound of beef. Baste frequently. If extra liquid is needed during cooking add more cola. Cool before slicing against grain.
