Ingredients
- 2 cups flour
- 1/2 cup cocoa
- 2 tsp baking powder
- 1 tsp salt
- 3 1/2 cups dark chocolate (some of them mint chocolate chips)
- 4 large eggs
- 1 tbsp instant coffee
- 1 tbsp vanilla
- 3/4 cup unsalted butter
- 1 1/2 cups dark brown sugar
- 1/2 cup white sugar
- 2tbsp2 tbsp flaky salt

Step 1
Sift dry ingredients.
Melt 2 cups of the chocolate and then cool to room temperature.
Mix eggs and coffee and vanilla.
Beat butter and add sugars. Gradually beat in egg mixture. Add melted chocolate and remaining 1 1/2 cups chocolate chips. Scrape bottom of bowl. Add dry ingredients and mix till combined. Cover with plastic wrap for 30 minutes.
Scoop cookies onto trays and sprinkle with salt. Bake at 350 for 10 minutes. I used the larger cookie scoop. Cool on cookie sheets
