Ingredients

  • Meatballs:
  • 3 lbs lean hamburger
  • 3 eggs
  • 1 green bell pepper, chopped
  • 1 1/2 cups cracker crumbs
  • 1 tsp garlic salt or powder
  • Oil
  • Sauce:
  • 2 jars sweet and sour sauce
  • 1 large can crushed pineapple
  • 3 tb soy sauce
  • 1/2 cup brown sugar, packed
  • 3 tb cornstarch (more if needed)

Preparation

Step 1

Combine hamburger, eggs, cracker crumbs, green pepper, and garlic salt together. Form into balls. In a small amount of oil in large skillet, brown meatballs on all sides. When done, place in crockpot.

Sauce:

Mix sweet and sour sauce, brown sugar, and just the juice from the pineapple together in a heavy saucepan. Make a paste with the cornstarch and soy sauce and add to ingredients in pan. Bring to a soft boil and add pineapple. If sauce needs thickened, keep adding more of the cornstarch/soy sauce paste. Ratio is 1 tb soy sauce to 1 tb cornstarch.

Place thickened sauce over meatballs in crockpot and heat thoroughly together.
