Ingredients

  • 1 Bar Cream Cheese (softened)
  • 16 oz. of Sour Cream
  • 1 small can of chopped green chilies (drained)
  • 2 cans of Mexican Corn (can use regular Sweet Corn)
  • 1 1/2 cups of finely shredded cheese (prefer Cheddar/Monterey Jack mix – any kind will work)
  • 1 package of Dry Ranch Dressing Mix (can use 1 1/2 packages for more flavor)
  • 1 can of Black Beans (drained well – not rinsed)
  • 1 bunch of finely chopped fresh Cilantro
  • Optional Ingredient
  • 1 small can of chopped or sliced olives

Preparation

Step 1

Mix all ingredients into bowl and refrigerate overnight to let flavors set.

Best served with Frito Scoops, but can be eaten with any kind of “hearty chip” or cracker.
