Potatoe Soup

A very rich and filling soup.
A great way to used left over potatoes

Ingredients

  • 2 onions
  • 8 Tbsp. butter
  • Fry in large soup pot
  • Add
  • 12 large potatoes (can used left over potatoes)
  • 4 Tbsp. parsley
  • 2 Tbsp. salt
  • 4 cups boiling water
  • Boil until potatoes are cooked
  • Mash potatoes
  • Add
  • 4 tbsp. butter
  • Mix together in small bowl
  • 4 tbsp. flour
  • 2 tsp. salt
  • sprinkle into potato mix; stir well as to prevent burning
  • remove from heat when bubbling
  • Add
  • 4 cups heavy cream
  • 4 cups milk
  • 2 Tbsp. OXO chicken base

Preparation

Step 1

-return to heat and simmer until desired thickness is reached
