Ingredients
- Large Batch:
- 1 large can (6 lb) of San Marzano whole tomatoes
- 1/2 c. olive oil
- 1 lg onion, chpd
- 12 garlic cloves, minced
- 5 tsp salt
- 1 tsp pepper
- 1 branch of basil
- fresh basil to garnish
- Small Batch:
- 2 28 oz cans of of San Marzano whole tomatoes
- 1/4 c. olive oil
- 1/2 lg onion, chpd
- 4-6 garlic cloves, minced
- 2 tsp salt
- pepper to taste
- 1 branch of basil
- fresh basil to garnish

Preparation
Step 1
Simmer onion gently in oil for a good 5 minutes, add garlic and simmer a few more. Make sure it doesn't burn!!! Pour the can of tomatoes in a large bowl and crush the tomatoes with your hands - do as chunky or smooth as you would like. Add tomatoes and spices to pot with a branch of basil. Simmer for 45 minutes or so. When serving, top with fresh cut basil.
