Ingredients

  • Large Batch:
  • 1 large can (6 lb) of San Marzano whole tomatoes
  • 1/2 c. olive oil
  • 1 lg onion, chpd
  • 12 garlic cloves, minced
  • 5 tsp salt
  • 1 tsp pepper
  • 1 branch of basil
  • fresh basil to garnish
  • Small Batch:
  • 2 28 oz cans of of San Marzano whole tomatoes
  • 1/4 c. olive oil
  • 1/2 lg onion, chpd
  • 4-6 garlic cloves, minced
  • 2 tsp salt
  • pepper to taste
  • 1 branch of basil
  • fresh basil to garnish

Preparation

Step 1

Simmer onion gently in oil for a good 5 minutes, add garlic and simmer a few more. Make sure it doesn't burn!!! Pour the can of tomatoes in a large bowl and crush the tomatoes with your hands - do as chunky or smooth as you would like. Add tomatoes and spices to pot with a branch of basil. Simmer for 45 minutes or so. When serving, top with fresh cut basil.
