Ingredients

  • 1 package (6oz) refrigerated grilled chicken breast strips finely chopped
  • 1/3 cup chopped green onions(about 5 medium)
  • 1/4 cup chopped cashews
  • 2 tablespoons teriyaki
  • 1 tablespoon sesame oil
  • 1 tablespoon lime juice
  • 2 teaspoons finely chopped garlic
  • 2 teaspoons grated ginger root
  • 2 cups coleslaw mix
  • 1/3 cup loosely packed chopped cilantro
  • 1 can refrigerator thin pizza crust
  • 1 egg
  • 1 teaspoon water

Preparation

Step 1

Heat oven to 400. Line a cooking sheet with parchment paper and then spray with non-stick spray.
In a 12 inch skillet cook chopped chicken, onion, cashews, teriyaki sauce, sesame oil, lime juice,garlic and ginger root over medium heat. heat 2 to 3 minutes. Stir occasionally until thoroughly heated. Stir in Coleslaw mix, cook 2 minutes longer. Stir in 1/3 cup cilantro. Cool completely.
Unroll pizza crust. Starting in the center press dough into a 16x12 rectangle. Cut rectangle into 12 squares.
Working with each square spoon 1/4 chicken mixture in the center. Fold opposite corners tucking it under neath to seal. Place on cooking sheet.
Beat the egg and water until well mixed. Brush on each Piadinis.
Bake 9 to 11 minutes or until golden brown. Remove from cookie sheet. Garnish with additional cilantro. Serve warm.
