Ingredients

  • 2 cups cooked chicken breast meat, chopped
  • 1 apple, peeled, cored, & small-diced (I used a McIntosh)
  • 1 rib celery, small-diced
  • 1/2 cup pecans, toasted & chopped
  • 1/4 cup red onion, small-diced
  • 1 cup mayonnaise
  • 1/2 cup Dijon mustard
  • 1 tsp. curry powder
  • splash of white wine vinegar or lemon juice
  • salt & pepper to taste
