Ingredients
- 2 cups cooked chicken breast meat, chopped
- 1 apple, peeled, cored, & small-diced (I used a McIntosh)
- 1 rib celery, small-diced
- 1/2 cup pecans, toasted & chopped
- 1/4 cup red onion, small-diced
- 1 cup mayonnaise
- 1/2 cup Dijon mustard
- 1 tsp. curry powder
- splash of white wine vinegar or lemon juice
- salt & pepper to taste
