Ingredients

  • 12 oz. pkg. lima beans
  • 1 onion, chopped
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 3 potatoes, peeled and cubed
  • 8 oz. kielbasa, sliced
  • 1 tea. salt
  • 1/4 tea. pepper
  • 1 tea. dried oregano leaves
  • 3 cups beef broth
  • 3 cups water
  • 1 bay leaf

Preparation

Step 1

Sort lima beans and rinse, then cover with cold water and soak overnight. In the morning, drain beans and rinse again.

Combine all ingredients in a 5 qt. cooker. Cover and cook on low for 8-9 hours or until beans and potatoes are tender. Remove bay leaf and using a potato masher, mash some of the means and potatoes.
