Ingredients
- Dry ingredients:
- 1 1/3 cups flour
- 1/2 cup sugar
- 1/3 cup brown sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup pecans
- 2/3 cup oats
- Wet ingredients:
- 1 cup buttermilk
- 1/2 cup melted butter
- 1 egg
- Extras:
- 15 oz crushed pineapple, drained
- 1/2 cup coconut
- Topping:
- 1/3 cup brown sugar
- 1/4 cup flour
- 1/4 cup coconut
- 2 TB oats
- 3 TB butter

Preparation
Step 1
Mix together dry ingredients in a large bowl. In separate bowl blend wet ingredients. Pour wet into dry ingredients. Stir until moistened. Do not overmix. Gently fold in pineapple and coconut. Spoon batter into well-greased muffin tins, about 2/3 full.
Mix topping ingredients together. Cut in butter with pastry blender. Sprinkle topping generously over muffins.
Bake at 400 for 20 minutes or til lightly browned. Test with cake tester, if desired.
