Ingredients
- 1 1/2 lbs. brussels sprouts, trimmed & cut in half
- 4 oz. pancetta, chopped
- 1/4 C olive oil
- Kosher salt & ground pepper
- 1 T balsamic vinegar

Preparation
Step 1
Preheat oven to 400.
Place brussels sprouts on sheet pan.
Add diced pancetta to pan along with olive oil, 1 1/2 t salt & 1/2 t pepper; toss
Roast 20-30 min tossing once during cooking.
Remove from oven & immediately drizzle with balsamic vinegar, tossing to coat.
