Peanut Butter Sandwich Cookies

Ingredients

• Filling:
• 1 cup butter-flavoured shortening
• 1 cup creamy peanut butter
• 1 cup sugar
• 1 cup packed brown sugar
• 1 tsp. vanilla
• 3 eggs
• 3 cups flour
• 2 tsp. baking soda
• ¼ tsp. salt
• ...........................................................
• ½ cup creamy peanut butter
• 3 cups icing sugar
• 1 tsp. vanilla
• 4 to 6 tbsp. milk

Preparation

Step 1

Cream shortening, peanut butter, and sugars.
Add vanilla.
Add eggs one at a time beating well after each.
Combine dry ingredients and add to creamed mixture.

Shape into 1 inch balls and place 2 inches apart on ungreased baking sheets.
Flatten with a fork.

Bake at 375° for 7 - 8 minutes.
Cool on wire racks.

Beat filling ingredients until smooth.
Spread filling on half of the cookies and top with another.
