Kofta Tagine

Ingredients

  • 1-2 lbs. ground beef
  • olive oil
  • 1 can tomato sauce
  • 2-3 cloves garlic
  • 1/2 cup curly parsley, chopped
  • 1/2 cup regular parsley, chopped
  • cumin
  • salt
  • pepper
  • 1 bullion cube (onion or veggie)

Preparation

Step 1

1. Heat tagine. Form meat into small meatballs. Pour oil into tagine, and cook meatballs in oil. Add tomato sauce with garlic, add parsley and bullion cube.
2. Cover and cook 20-30 minutes.
3. Season with salt and pepper and cumin.
4. If desired, crack 6 eggs into mix and let cook like fried eggs until whites are no longer runny.
