  • 4 boneless, skinless chicken-breast halves
  • 1/2 cup chopped onion
  • 2 tablespoons soy sauce
  • 1 tablespoon lemon juice
  • 1 tablespoon vegetable oil
  • 2 teaspoons light brown sugar
  • 2 teaspoons chili powder
  • 1 teaspoon ground coriander
  • 1/2 teaspoon minced garlic
  • 1/4 teaspoon ground ginger
  • 1 cup prepared peanut sauce

Step 1


1. Preheat a grill to medium or preheat the broiler. Place wooden skewers in water to soak.

2. Cut the chicken into 3x1/4-inch strips.

3. Combine the onion, soy sauce, lemon juice, oil, brown sugar, chili powder, coriander, garlic and ginger in a large bowl and mix well.

4. Set aside 1/4 cup of the marinade for basting. Add the chicken to the remaining marinade in the large bowl and turn to coat. Let stand 10 minutes. Drain the chicken, discarding the marinade.

5. Thread the chicken accordion-style onto the skewers. Grill or broil the skewers, turning and brushing occasionally with the reserved marinade, until the chicken is cooked though, 4 to 5 minutes per side. Serve with the peanut sauce.

Variation
Rev up the flavor level with lime juice instead of lemon and use 2 teaspoons grated fresh ginger instead of the ground ginger.
