Ingredients
- 6 chicken theighs
- 1 red pepper, sliced
- 2 lemons, halved
- 5 mini-portobello mushrooms, quartered
- 1/2 onion, sliced
- 1 tsp oregano
- 2 Tbsp olive oil
- salt
- pepper

Preparation
Step 1
1.Preheat over to 400.
2.Season the chicken with salt and pepper.
3.Rub about 1 tsp of the olive oil on the bottom of baking or casserole dish.
Place the chicken evenly on the bottom, followed by the pepper, onion and mushrooms.
4.Pour the remaining olive oil over the chicken and vegetables.
5.Squeeze the juice over the dish, and then add the lemons.
6.Bake uncovered for an hour in a half.
