Shrimp and Peapod Vinaigrette

Ingredients
- 1 Bay leaf
- 2 1/2 lbs. large shrimp
- lots of snow pea pods
- 1/2 cup olive oil
- 3 Tbsp white wine vinegar
- 3 Tbsp Dijon mustard
- 1 Tbsp chopped shallots
- 1 tsp finely minced ginger
- 1 clove garlic, minced
- 1 Tbsp chopped dill
- salt and pepper to taste
- pinch of salt

Step 1
1. Cook shrimp in boiling water with the bay leaf in it until they are just pink through. Remove the stems from the pea pods, and blanch in boiling water for 10 seconds, and then refresh under cold water immediately after you drain them.
2. For vinaigrette, mix all ingredients from olive oil through sugar togeter. Wrap each shrimp with a pea pod and secure with a toothpick. Place in a large bowl, and cover with dressing. Allow to marinade overnight.
