Ingredients

  • 20 jumbo pasta shells
  • 1 beaten egg
  • 400 g. shrimp
  • 1 cup grated cheddar cheese
  • 1 tomato, chopped
  • 2 tbsp. sliced green onion
  • 1/2 tsp. dried basil
  • 1/8 tsp. pepper
  • 1 beaten egg
  • 1 tbsp. water
  • 2/3 cup fine bread crumbs
  • cooking oil
  • tartar sauce

Preparation

Step 1

Cook pasta until just tender. Drain.

Stir together first egg, shrimp, cheese, tomato, green onion and spices. Fill cooked shells with seafood mixture.

Stir together second egg with water. Dip each filled shell in the egg mixture and then roll in bread crumbs. Fry, a few at a time, in deep hot oil (365 degrees) for about 2 minutes or until golden brown. Drain on paper towels. Serve with tartar sauce for dipping.

Note - can be made ahead and then reheated in oven.
