Ingredients
- 1/2 cup olive oil
- 6 brown onions chopped
- 5 cloves roasted carlic, peeled
- 1-7oz can ortega chilis
- 1 can corn kernels
- 10 sun driend tomatoes, minced
- 1/4 tsp cinnamon
- 1 tsp kosher salt
- 1 can beer
- 4 red bell peppers, chopped
- 4 yellow bell peppers, chopped
- 3 chilis, seeded and diced
- 1/3 cup chili powder
- 1 1/2 tsp cumin seeds
- 1 tsp ground coriander
- 10 chicken breasts, cubed
- 2-28oz cans tamotoes
- juces of 2 limes

Step 1
Heat 3 Tbsp oil in dutch oven add onions and grarlic, cook 5 minutes, stirring often. Add bell peppers, chilis, corn, sun dried tom.. cook 10 minutes on medium heat. Stir in dried seasonings, cook 5 minutes. Remove from heat. In large skillet heat remaining oil add chicken cubes, saute. Add cooked chicken to dutch oven and stir in puree of tom. and beer. Simmer 45 minutes over medium low heat. Season with lime juces and kosher salt. Serve with chopped green onions, sour cream, and grated pepper jack cheese.
