Ingredients

  • 12 ounces chorizo or pork sausage
  • 2 cups frozen whole kernel corn
  • 1 14 1/2-ounce can diced tomatoes
  • 1 cup uncooked instant rice
  • 1/2 cup water
  • 2 teaspoons chili powder
  • l/2 teaspoon ground cumin
  • 1 15-ounce can pinto beans, rinsed and drained
  • 3/4 cup shredded Mexican-blend cheeses or co-jack cheese

Preparation

Step 1

Remove casing from sausage, if present. In a large skillet cook sausage over medium heat for 10 to 15 minutes or until brown. Drain off fat; set aside.
Add corn, undrained tomatoes, uncooked rice, water, chili powder, and cumin to skillet. Bring to boiling; reduce heat. Simmer, covered, for 5 minutes or until liquid is absorbed and rice is tender. Stir in beans and cooked sausage; heat through. Sprinkle with cheese; cover and let stand for 2 to 3 minutes until cheese is slightly melted.
