Pickled Beets

Wash and trim the beets - trim off beet greens, leaving 2 inches of the beet tops on.

- 1 lb. beets
- 1/2 cup cider vinegar
- 1/2 cup water
- 2 tbsp. sugar
- 1/8 tsp. pepper
- 1/8 tsp. salt

Step 1
Place in large 2 quart saucepan, cover with water, bring to boil. Reduce heat to medium, simmer 20-40 minutes until tender when pierced with a fork. Drain, peel, slice. Bring vinegar, water and sugar to boil. Place beets and vinegar mixture in 1-quart serving dish, cover and refrigerate until serving. Drain before serving.
