Ingredients

  • 5 oz Egg yolks
  • 8 oz sugar
  • 8 oz Milk
  • Flavor to taste
  • 1 pt heavy cream

Preparation

Step 1

1. boil milk and 1/2 of the sugar
2. mix the yolks and the other 1/2 of sugar
3. temper into the milk
4. stir the mixture on LOW heat just like creme anglaise until it becomes thick
5. cool the mixture and place into the fridge
6. add flavor into mixture
7. whip the heavy cream until med peak and fold it into the mixture
8. pour mousse into molds and freeze
