Crispy Oven Fish Fry

Ingredients

  • 3 TB butter
  • 1-1/2 cups Panko bread crumbs
  • 1 TB Old Bay Seasoning
  • 1 TB onion powder
  • 1 TB garlic powder
  • 1 lemon or lime, zested
  • 2 TB fresh chopped thyme OR 2 tsp. dried thyme
  • 2 TB finely chopped chives or green onions
  • 4-6 tilapia fillets or other flaky fish
  • Salt
  • 2 egg whites, beaten
  • Lemon wedges

Preparation

Step 1

Heat oven to 400. Place a baking rack over a cookie sheet. Melt butter over low heat in a small pot. Combine bread crumbs with melted butter in a shallow dish. Season bread crumbs with Old Bay, onion powder, garlic powder, citrus zest, thyme, & chives. Clean & pat fish dry, then season with salt, to taste. Coat fish in egg whites, then bread crumbs. Place on baking rack. Bake on center rack of oven until the fish is white & flaky & crumbs are golden, about 20 minutes.
