Ingredients

  • 1/2 tsp sea salt
  • 1 clove garlic minced
  • 1/4 c rice wine vinegar
  • 1 tsp cumin
  • 3 c tomatoes, diced
  • 1/2 c onion, finely chopped
  • 2 tbs cilantro, fresh, chopped
  • 1 (15 oz) can blackeye peas, rinsed and drained
  • 1 jalepeno pepper, mince (optional)
  • evoo

Step 1

Place ingredients in large bowl and toss with evoo and vinegar. More garlic if desired. Serve with pita chips.
