Ingredients

  • 2 T oil
  • 1 pound lean pork cubes
  • 1 onion, diced
  • 2 stalks celery, diced
  • 2 T AP flour
  • 1.5 tsp cumin
  • 1 tsp ground coriander
  • 1 tsp curry powder
  • 1/4 tsp crushed chilis
  • 1 c chicken stock
  • 1/2 unsweetened orange juice

Preparation

Step 1

1. Heat oil in heavy pan on medium high.
2. Brown pork evenly, about 5 minutes.
3. Remove from pan.
4. Add onion and celery to pan. Cook until soft, about 5 minutes.
5. Stir in flour and seasonings. Cook and stir just until flour is absorbed.
6. Gradually add chix stock and OJ.
7. Bring to a boil.
8. Add pork cubes, cover and simmer about 1-1.25 hours or until meat is tender.
