  • 2 onions, chopped
  • 1-2 cloves of garlic, minced
  • 2 Tablespoons Lemon Juice
  • 2 Tbsp chili powder (Optional)
  • 2 Teaspoons dried oregano
  • 1 tsp ground cumin (optional)
  • 1 green pepper diced
  • 2 Cups peeled, diced eggplant (1 Medium Eggplant
  • 1 Six ounce can of tomotae paste
  • 1 and 1/4 Cup Fat Free Beef Broth
  • 1/2 Teaspoon Cinnamon
  • 1/4 Teaspooon Nutmeg

Preparation

Step 1

1. Spray large pot with cooking spray.
2. Brown ground beef and drain extra fat.
3. Stri in remaining ingredients and heat to boil.
4. Simmer covered 10 minutes.
5. Uncover and simmer til liquid is nearly gone.
6. Serve topped with crumbled Feta and Romano.
