Ingredients
- 1/2 cup veg oil
- 1/2 cup flour
- 1 green bell pepper (diced)
- 1 onion (diced)
- 2 celery stalks (diced)
- OR 12 oz bag mirepoix
- 1/2 TBS minced garlic
- 14.5 oz can diced tomatoes
- 1-2 TBS Cajun season (Slap Ya Mama or Tony's)
- 2 cup chicken broth
- 2 lb crawfish meat
- 1 tsp kosher salt
- 1/4 tsp black pepper
- 2 tsp dried parsley flakes
- 2 TBS butter
- 2 cups cooked rice

Step 1
Heat oil in skillet over medium heat. Gradually stir in flour, stirring constantly, until medium brown in color.
Stir in green bell pepper, onion, and celery. Saute for 5-10 minutes (until veggies are soft).Stir in garlic. Cook for one minute more. Stir in tomatoes, chicken broth, Cajun seasoning, crawfish, salt, pepper, parsley and butter. Simmer on low, 45 - 60 minutes, until thoroughly cooked throughout. Stir in cooked rice. Cook additional 5-10 minutes.
