Honey-Ginger Crusted Chicken

This is a tasty, healthy recipe usine boneless skinless chicken breast, baked with a cornflake topping and seasones with honey, orange and ginger.

Ingredients
- 4 small boneless, skinless chicken breasts (12 oz total)
- 1 tablespoon honey
- 1 tablespoon orange juice
- 1/4 teaspoon ground ginger
- 1/4 teaspoon black pepper
- Dash ground red pepper (optional)
- 3/4 cup crushed cornflakes (about 1/3 cup)
- 1/2 teaspoon dried parsley flakes
- Lemon wedges for garnish

Preparation
Step 1
Spray a shallow baking pan with non-stick spray, and place chicken breasts in pan.
In a small bowl, combine:
- honey
- orange juice
- ginger
- black pepper
- red pepper (if desired)
Brush mixture over chicken.
Combine cornflakes and parsely, then sprinkle over chicken to coat.
Bake, uncovered at 350˚ 18-20 minutes or until chicken is tender and no longer pink (170 degrees internally).
Note: I generally find that I have to bake longer in my oven and keep checking doneness.
Serve with lemon wedges.
