Ingredients

  • Batter
  • 3/4 stick butter, plus 1 TBS melted for greasing molds
  • 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp ground coriander
  • 1/4 tsp nutmeg
  • 1/8 tsp allspice
  • 1/4 cup sugar
  • 3 TBS packed light brown sugar
  • 2 large eggs
  • Glaze (optional)
  • 1/2 cup honey
  • 1/2 cup water
  • 1 cup sugar

Preheat oven to 400
Brush molds with melted butter then chill until set.

Sift together flour, baking powder, spices and a pinch of salt

Whisk together sugars and eggs until well combined. Add flour mixture and whisk until just combined, then stir in remaining butter (6 TBS) until just incorporated. Spoon batter into molds, fill them about 2/3 full. Bake 5 minutes, then reduce temperature to 350 and bake until springy to the touch and edges are lightly browned, 4 to 6 minutes. Turn out onto a rack and cool.

Glaze (optional)

Bring to a boil and thicken. When you remove from heat add 1 TBS grand marnier, vanilla liquour or kaluha.
