Ingredients

  • 2 tablespoons chia seeds + 6 tablespoons water
  • 1/2 cup brown sugar
  • 1/2 cup cane sugar
  • 1/2 cup coconut oil, liquid
  • 1/4 cup almond butter
  • 1 teaspoon vanilla
  • 1 1/4 cup whole spelt flour
  • 1 cup oat flour
  • 1 cup rolled oats
  • 1/4 cup hemp seeds
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup mini chocolate chips
  • Mini marshmallows

Preparation

Step 1

Preheat oven to 375F.

Combine the chia seeds and water in a medium size mixing bowl and let stand for 5 minutes. Add the sugars, melted coconut oil, almond butter, and vanilla. Mix well. Sprinkle in the flours, oats, hemp seeds, baking powder, and salt. Mix until almost fully combined, then add the mini chocolate chips and mix well. Using a cookie scoop, or a spoon, form tablespoon sized cookie dough balls on a parchment lined cookie sheet. Press the cookie dough ball down with your fingertips as you wedge in three mini marshmallows per cookie. Bake for 8 minutes, or until edges are slightly brown. Remove from the cookie sheet to cool and store in an airtight container at room temperature for up to 5 days.
