BBQ Chicken Salad

Ingredients
- 4 to 6 grilled chicken breasts, shredded
- 1 (18 ounce) bottle barbecue sauce
- 1 package bacon
- 1 to 2 bags lettuce
- 1 can corn, drained
- 2 tomatoes, chopped
- 1/2 medium red onion, sliced into rings
- 1 to 2 cups shredded mozzarella cheese

Step 1
Preheat oven to 350 F and grease a square baking dish. Combine 1 cup of barbecue sauce with shredded chicken. Spread chicken in prepared baking dish. Cover with foil and bake for 25 minutes. Meanwhile, fry bacon to desired crispness. Drain on paper towels. Crumble and set aside. Heat corn and set aside. Heat remaining barbecue sauce in a pan over medium-low heat.
Assemble the salad on each dinner plate, layering ingredients in the following order: lettuce, corn, crumbled bacon, tomatoes, onion, shredded barbecue chicken and cheese. Serve with remaining sauce, if desired.
