Ingredients
- 1 cup sugar
- 3 cups flour
- 4 cups raisin or plain bran flakes
- 2 teaspoons baking soda
- 1 1/2 teaspoons salt
- 3 cups buttermilk
- 1/3 cup melted shortening
- 2 beaten eggs

Step 1
Mix sugar, flour, bran flakes, soda and salt in large bowl. Add buttermilk, shortening and eggs. Mix well. Store batter in airtight container in refrigerator and use as desired. Batter will keep up to six weeks. Do NOT stir again as you use it!

MICROWAVE DIRECTIONS:
Line custard cups or microwave muffin pans with one or two paper liners. Fill liners 1/2 full. Microwave on full power (high) 30 to 40 seconds per muffin. Cool immediately on rack or towel.

Makes enough batter for 4 dozen muffins. NOTE: May also bake in 400deg F oven for 15 to 20 minutes.
