Ingredients
- 1/2 pound vermicelli
- 2 teaspoons hot chili oil
- 2 teaspoons grated ginger root
- 2 cloves garlic -- minced
- 1/4 cup thinly sliced shitake mushrooms
- 1 medium red pepper -- julienned
- 2 cups chopped boy choy
- 1/2 cup vegetable broth
- 3/4 cup sugar snap peas or snow peas
- 2 Tablespoons soy sauce
- 2 Tablespoons rice vinegar
- 1 Tablespoon dark sesame oil
- 1/4 cup chopped peanuts or cashews -- optional

Step 1
Cook the noodles. While they are cooking, heat the chili oil in large skillet. Add ginger and garlic; cook, stirring constantly for 30 seconds. Add mushrooms, pepper and boy choy and cook 3 minutes, stirring occasionally. Next, add the broth and peas and simmer, stirring occasionally, until the vegetables are crisp-tender, 3-5 minutes. Stir in soy cause and vinegar.
Add the noodles to the skillet and add sesame oil. Cook 1 minutes, tossing well.
