  • For the garnish:
  • 1 medium ripe tomato, finely chopped (optional)
  • 2 Tbsp. finely minced white onion
  • 1 fresh jalapeno chile, seeded and finely chopped (optional)
  • 3 very ripe avocados
  • 1/4 cup lightly packed, finely minced, cilantro leaves
  • juice of 1/2 lime; lemon juice can be substituted
  • 1 tsp. extra-virgin olive oil
  • sea salt
  • leaves from 1 cilantro sprig, chopped

Step 1

Place the tomato, onion, and chile in a bowl and mash a bit but leave it chunky. Halve the avocados lengthwise, remove the seeds, and scoop or squeeze all the flesh into the tomato mixture. Mix together with the cilantro, lime juice, olive oil, and salt to taste.
Garnish with chopped cilantro and serve at once if possible. The guacamole can be kept at room temperature for up to 1 hour. First clean the sides of the bowl with a damp paper towel, then cover the surface directly with a piece of plastic wrap. It can be stored in the refrigerator for up to 2 or 3 hours, but it's best to wait and mix in the salt and cilantro when ready to serve.
