3/4 cup sugar

3 teaspoons instant dry potatoes

1 cup flour

1 cup water

Mix well and add to starter. Let this stand out of refrigerator all day or night. This will not rise, only bubble.

Take 1 cup starter out to make bread and place remaining starter back in refrigerator. Keep in refrigerator 3 - 5 days then feed again. If you do not wish to make bread, throw away one cup starter or give to someone. The starter must be fed every 3 - 5 days whether you wish to make bread or not.

Sour Dough Bread:

In a large bowl, make stiff dough of:

1/2 cup sugar

1/2 cup cooking oil

1 teaspoon salt

1-1/2 cup warm water

1 cup starter

6 cups flour (enough to make dough stiff)

Grease top of dough and sides of bowl. Cover lightly. Let rise overnight (at least 8 hours).

To make loaves:

Divide dough into three equal parts and knead lightly on floured board. Put into greased pans and brush with oil. Cover lightly. Let rise (it rises slowly) at least 8 hours.

Bake on bottom rack at 350o for 30 - 40 minutes. Remove from oven and brush tops with butter. Take bread out of pan and let cool (lightly covered) on its side, on a rack.
