Ingredients
- 2 sweet red peppers (about 8 ounceseach) OR: 1 jar (7 ounces) roasted red peppers, drained
- 1/4 cup mayonnaise
- 3 tablespoons lowfat plain yogurt
- 1/4 teaspoon salt

Step 1
Preheat broiler. Place peppers on sheet of aluminum foil on broiler pan.
Broil 6 inches from heat source, turning, until blackened all over, about 15 minutes. Place in paper bag and close to soften.
When peppers are cool enough to handle, peel over sieve set in bowl so juice drips into bowl. Discard skin and seeds.
Transfer peppers and juices to food processor or blender. Whirl until smooth puree.
Whisk together mayonnaise, yogurt and salt in medium-size bowl. Stir in red pepper puree. Refrigerate, covered, until ready to use.
Make-Ahead Tip: Mayonnaise can be 1 made up to 3 days ahead and refrigerated, covered.
