- 2.5 T coarse salt
- 1 T ground allspice
- 1 T cayenne
- 3-4 # pork tenderloin
- Salsa

Step 1
Preheat oven to 400°F or BBQ.
1. Stir together salt, ground allspice and cayenne.
2. Pat dry 3 to 4 pounds of pork tenderloin and sprinkle spice mixture over pork, pressing to adhere.
3. Heat oil in a heavy skillet until hot but not smoking. 4. Brown pork on all sides [one at a time, one minute each].
5. Roast in a large pan until meat thermometer inserted diagonally 2 inches into tenderloin center reads 155°F, 20 to 25 minutes.
6. Let stand five minutes before slicing.
Serve with salsa.
