Ingredients

  • 1/4 cup chopped onion
  • 2 (14 1/2oz) cans readycut tomatoes
  • 2 2/3 cup drained canned pinto or kideny beans
  • 8 corn tortillas, cut in 1" wide strips
  • 8 oz (2c) shredded chedder cheese
  • 1 cup sour cream
  • 3 oz diced green chilis
  • 1 cup sliced mushrooms
  • 1 tsp chili powder
  • 1 tsp cumin

Preparation

Step 1

Sautee onions for 4 minutes (non stick spray), add tomatoes, chilis, mushrooms, beans, chili powder, and cumin. Simmer uncovered 10 minutes. In 11 1/2x7 1/ cassarole dish arrange 1/3 of tortilla strips in a single layer. Save some cheese for garnishing. Pour 1/4 of tamato mixture and 1/3 of cheese over tortilla strips. Spoon 1/3 sour cream over and layer 2 more times. Bake 30 minutes at 350.
