Ingredients

  • 3 TBL unsalted butter
  • 1 red bell pepper, seeded & diced
  • 1 poblano chile, seeded & diced
  • 1/2 C diced onion
  • 1 TBL minced garlic
  • 1 tsp hot chili powder
  • 1 tsp grd. cumin
  • 1/2 tsp grd. coriander
  • 6 TBL flour, divided
  • 3 C whole milk
  • 1 C beer (such as Corona)
  • 1 C low sodium chicken broth
  • 1/2 C dry converted white rice
  • 3 C shredded pepper jack cheese
  • 2 C shredded cooked chicken
  • 2 TBL chopped fresh cilantro
  • lime slices
  • tortilla chips

Preparation

Step 1

MELT butter in lg. pot
stir in bell pepper, poblano, onion, garlic, chili powder, cumin & coriander
sweat mixture until pepper egin to soften, abt. 5 min

WHISK in 3 TBL flour to coat vegies
cook 2 min
whisk in milk, beer & broth until smooth
bring mixture to simmer
stir in rice
simmer until tender, abt 15 min

COMBINE cheese w/ remaining 3 TBL flour in resealable plastic bag
toss to coat
add cheese to soup a handful at a time, stirring to melt completely before adding next handful
add chicken & cilantro to heat 3-5 min

GARNISH each serving of soup w/ lime slices
