Greek Style Rice with Spinach 0 Picture

Ingredients

  • 1 1/2 tablespoons Olive oil
  • 1 large Onion, chopped
  • 1 1/3 tablespoons Garlic, minced
  • 4 cups Fresh spinach, clean and chop
  • 3 tablespoons Lemon juice
  • 4 cups cooked rice
  • 2 tablespoons Basil, minced
  • Salt and pepper to taste
  • 1/4 cup Feta cheese, crumbled

Preparation

Step 1

1. Heat oil in a heavy skillet or wok. Add onion and garlic and cook on medium-high heat until onion is softened and transparent.

2. Add spinach, lemon juice and rice; cook, stirring frequently, until spinach is limp and rice is thoroughly heated. Toss in basil. Add salt and pepper to taste.

3. Arrange rice in a mound on a colorful platter. If desired, surround with blanched sugar-snap peas. Sprinkle rice mixture with crumbled Feta cheese.

Notes: Really very good and fairly simple. Doubled the spinach and lemon juice - next time would increase the amount of spinach - even more. Would also be good with brown rice.
