Ingredients

  • 12 (1 oz) slices Virginia or Black Forest ham
  • 3 (1 oz) slices whole-grain or white bread, each torn into 4 pieces
  • 1 1/2 cups (12 fluid oz) egg substitute
  • 3 cups shreeded cheddar cheese
  • 1/4 tea. pepper
  • 3 Tbsp. chopped fresh chives

Preparation

Step 1

Place rack in middle of oven and preheat oven to 400 degrees. Lightly coat 12 cup muffin tin (with 4 oz cups) with cooking spray.

Gently fit one ham slice into each cup (edges will stick up). Add some of the bread in the center of each, then pour the egg substitie on top. Sprinkle with cheese, then with pepper.

Bake for 15 minutes, or until set. Remove from muffin tin and sprinkle with chives.
