Authentic Sushi Rice

- 3 cups Japanese style rice
- 3 1/4 cups water
- 3/4 cups white vinegar
- 1/3 cup plus 2 Tbsp sugar
- 2 Tbsp salt
- 2 tsp msg

Step 1
Cook rice with 3 1/4 cups water using the following method...
Add rice and water in pan and cover. Let soak for about an hour. Bring rice to boil quickly over high heat. Do not lift the lid. Reduce heat to low and simmer for 20 minutes. Without lifting lid, turn off heat and let stand 5 to 10 minutes. Fold rice over once, carefully, to fluff up the kernels.
In a saucepan, cook vinegar, sugar, salt, and msg until sugar dissolves. Cool.
Using a rice paddle, scoop cooked rice into a large shallow baking pan. Pour half the vinegar mixture evenly over the surface. Fold liquid in, carefully. Continue fanning and folding until little liquid is left. The rice absorbs the excess liquid as it cools.
Use the remaining vinegar mixture to assemble the sushi. Dipping your fingers into it to keep the rice from sticking.
