Ingredients

  • 1/2 cup lentils
  • 6 cups water
  • 1 bay leaf
  • 1 tomato
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon cardamom
  • 1/8 teaspoon coriander
  • 1/4 teaspoon ginger
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cumin
  • 1/2 teaspoon cayenne
  • 2 tablespoons light butter
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon salt

Preparation

Step 1

1. Rinse and drain lentils. Bring to boil with water and bay. SImmer 45 mins.

2. Chop tomato. Blend cinnamon-cayenne.

3. Melt butter in skillet. Add spices. Cook 1 min. Add onion and garlic, saute 3 mins.

4. Add to lentils with tomato, lemon, salt. Simmer 15 mins, adjust seasoning. Remove bay. Puree a bit - but leave it somewhat chunky.

Excellent. Used red lentils.
