Avocado Caesar Salad Dressing

Ingredients
- 1/2 cup avocado
- 2 Tablespoons lemon juice
- 1 Tablespoon red wine vinegar
- 1 teaspoon mustard
- 2 cloves garlic
- 2 pinches sea salt
- 1/3 cup light oil (olive oil, grape seed oil)

Preparation
Step 1
Blend all of the ingredients (except oil) together in a blender, or use a hand immersion blender. Then slowly drizzle in oil while continuing to blend.
Serve over grilled romaine. Makes enough for 3 servings. *Note: you can reduce the fat and calories by using water instead of oil in the dressing. But most people I know on restricted no starch diets are looking for all the safe calories they can get, so feel free to go full fat! I love this dressing over grilled romaine. Simply slice a couple hearts of romaine in half lengthwise, rub in a little olive oil, and grill on each side for 1 to 2 minutes. Garnish with sea salt, black pepper, and fresh herbs.
