- 4 Lbs boneless rump roast
- 2 tablespoons olive oil
- 2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 dried thyme
- 1 bay leaf
- 3 cup water divided
- 3 medium potatoes
- 8 lg carrots
- 1/2 pounds pearl onions
- 1/2 cup flour
- 1/2 teaspoon browning sauce optional

Step 1
Brown roast in dutch oven in oil. Combine salt pepper thyme sprinkle over meat. Add bay leaf . And 2 cups water; brig to a boil. Reduce heat, cover, and simmer for 2.5 hours. Add potatoes, carrots, and onions. Cover and simmer for 45 mins: make gray and serve.
