Ingredients
- 1/4 cup melted butter
- 1/4 cup sugar
- 1/4 cup finely shredded, pared carrot
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 eggs
- 2 tablespoon aquavit or vanilla
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 cup golden or dark raisins
- FROSTING
- 1/4 cup butter, at room temperature
- 3 ounces cream cheese, at room temperature
- 1 cup powdered sugar
- 1/2 cup slivered or sliced almonds, toasted

Preparation
Step 1
Butter an 8-inch square cake pan. Preheat the oven to 350 degrees.
In a large bowl, mix together the melted butter, sugar, carrot, salt, cinnamon, eggs and aquavit or vanilla and beat until light. Mix together the flour and baking powder and stir into the batter. Stir in the raisins. Pour into the prepared pan.
Bake for 30 to 35 minutes until the cake springs bake when touched in the center.
To make the frosting, beat the butter, cream cheese and sugar until smooth. Spread the frosting over the cake. Make a decoratvie pattern on the top of the cake. Sprinklw with the almonds.
